compression tests like this are just indictitive are they not, or are they an accurate representation of dynamic compression?

When you do it, don't you pull out the spark plug and put the compression test probe into the spark gap? And then (somehow) hand crank the engine? The gauge then works like a typical pressure gauge and measures the PSI that the cylinder (when piston is at TDC) has in it...

pull the plug out and replace it with guage (also stop fuel from going in - pull pump relay or unplug injector). then crank (not by hand) the engine for about 10 seconds. read the guage. You should also pay attention to how the guage needle moves.

any workshop manual has instructions on how to do it

the tester looks like a pump, twist it into the spark plug hole firmly and all i did was flick it to middle between gas and petrol ehhe
