Unless you want to use something like sandstone logs
(500x500x1500-2000 size) set them in a reverse batter footing so can hook into the bank.
As for a DIY I would just simple either plant out the banks with Aussie native plants and floater stones or use smaller one man size (300mm) stone to follow the same line as the current angle will usually allow water to pass over the stone without washing it out.
Sort of similar to dry stoning around the inner bank of a dam.
